For those of you who are going to doubt that my passion will thrive.
In class, Chef had explained to us how way back when, some people would kind of shrug the idea that the career path of choosing to be a chef is anything amazing. But, unfortunately, the more i get into this field, the more i start to realize that that is still the idea in some individuals minds…especially, and again, unfortunately, this mainly pertains to my age group. This blog isn’t going to be about me expressing my opinion, because i don’t need anyone to agree with me, because i know that no matter what any one says, and no matter how many times some one will try and drill the crazy thought of pastry not being a successful career choice, this is still going to be my passion. SO, anyways, what i’m trying to get at, is that this blog will kind of be a way of me explaining why i’m so into pastry and baking, and to give you some kind of lesson of this career.
No matter who we are, there is something that we do that makes us feel rewarded and accomplished. And for me, that just so happens to be baking. There is more to baking than you may think. Of course, you take all of the ingredients, put them together, and boom, your done. But not necessarily. Unless your making something that comes out of a box, patience and concentration comes very handy when your making something that requires an ingredient. Now, lets compare baking to just cooking in general. If your making…spaghetti sauce lets just say. You take your tomato paste..your diced tomatoes…and whatever else you want to put in it. You put it all in the pot, and you start to cook it. Just when you think its about ready…you taste it and you think to yourself…”Hmmm…I think this needs a little bit more salt.” Are you going to get your measuring spoons out and measure 3/4 teaspoon of salt? No. You’re going to put whatever amount you desire, taste it again, and decide if it still needs something else. Pastry and baking is not like that at all. You’re given an ingredient, and you follow it. If you make one mistake, your whole batter could be ruined. If you’re making brownies, you cant just guess how much eggs you need to put in it..every single ingredient that you put into anything serves a purpose besides give it flavor. And without those purposes, what would be the point?
Since you all know i love to make cupcakes, i’ll use those as an example. After your batch of cupcakes are done baking, you take them out to be cooled. What else do cupcakes need besides the actually cake itself….frosting! Now that your cupcakes are done, you have to decide what frosting you want to go with your chocolate cupcake. Do you want just vanilla, chocolate, or do you want to get fancy and put a cream cheese frosting..or maybe a buttercream…NOW that you have decided what type of frosting your going to put on your cupcake, your going to decide HOW your going to put it on. Or you going to pipe it on with your….

Or, hey, maybe you just want to pile all of the frosting on it, or maybe just smooth it over on top. Now, lets get a little complex here, what if your making a cake? You’d like your birthday cake to look nice, right? You wouldn’t like it to look like…

Pastry and baking is not just about knowing how to put ingredients together, how to set an oven, and remembering to use a timer. Its also about knowing how things go together to look pleasing to the eye. I know that i would rather eat this cake:
Than the first one shown. Despite what others say, Baking and pastry is an art. Hence, Baking and pastry ARTS. Besides cooking, drawing and painting have been a hobby of mine. So baking and pastry kindof just…fits. Not just anyone can do this career. And if you think differently, i always love a challenge. I am going to school to eventually be able to make things like this:

This is what i want to do. For the deliciousness, and the art of it. This is my way of expressing myself, and if you think thats weird, or pathetic, i could just as easily find whats weird and pathetic with how you express yourself. Everyone is different. Let it be.

I’m going to try and make the meringue and graham cracker myself…well see how that turns out, i’m hoping that the plating will turn out beautiful…The purple of the plum should compliment the orange of the pumpkin pretty well. I have some ideas in my head. And i’m pretty excited to try it out!
